Scientists have discovered that temperatures around 12 degrees Celsius help slow down the ripening process, keeping mangoes firm and minimizing spoilage.
A research team from Hainan University (China) reported that mangoes continue to ripen after being picked. When exposed to high temperatures, the fruit quickly changes color, softens rapidly, and loses its natural flavor. This process also causes a gradual decrease in vitamin C and antioxidants in mangoes.

Mangoes stored in a cool environment retain their moisture and texture better. They are less prone to wrinkling, lose less water, and maintain their color for longer.
Scientists have found that mangoes stored at high temperatures between 26 and 30 degrees Celsius deteriorate significantly faster. The weight of the fruit can decrease by up to 17% due to water loss. Meanwhile, mangoes stored properly in cold storage only lose about 4% of their weight.
Temperatures around 12 degrees Celsius also help activate the natural defense mechanisms inside the mango. The study also noted that temperatures that are too low can cause the flesh to brown, reduce flavor, and affect nutritional value.
How to preserve mangoes at home
It is recommended to leave unripe mangoes at room temperature to ripen naturally. Once ripe, they should be transferred to the refrigerator to extend their shelf life.
Mangoes should be stored at a moderately cold temperature, not too cold or near the freezer. Temperatures that are too low can easily cause the fruit to lose its natural flavor.
Additionally, mangoes should be kept away from direct sunlight and high heat sources, as heat causes the fruit to soften quickly and bruise easily.
According to the research team, proper temperature control helps mangoes retain their freshness for longer while preserving their nutritional value.
Even a small change in storage methods can significantly reduce post-harvest spoilage.
